Creamy potato soup

Yesterday I was in the mood for soup, but it was only about 2 pm, so I decided to try and make it in the crock pot while I took a nap… I found a recipe on allrecipes.com that I’d made before and it was really pretty good, so I decided to try it in the crock pot this time.

(this will make 2 servings, I wanted to bring some for lunch!)

2 russet potatoes, cubed *I heated them up in the microwave a few minutes first, so they were pretty soft when I put them in*
1/3 cup red onion
1/2 can condensed cream of chicken soup
3/4 cup milk
salt & pepper to taste
1/4 teaspoon dill weed
pinch of parsley
2 slices bacon
1 cup shredded cheddar cheese

Pour milk and soup in a bowl and whisk until mixed. Pour into crock pot, adding onion, potatoes, seasoning, and 3/4 cup of cheese. Leave on high for 3 - 3 1/2 hours.

I like to bake my bacon - I never knew you could do this, but I found out about it on pinterest, and have been doing it since then! The only problem is, you really have to watch it, which I didn’t do, and I ended up burning my bacon… so I didn’t have as much bacon as I usually like to put in my potato soup!
{To bake your bacon - place on a layer of aluminum foil on a cookie sheet. Put in the cold oven, and set it to 425. Your time will vary depending on how long it takes your oven to heat up - you really have to watch it! Mine takes anywhere from 20-35 minutes}

*notice the burnt bacon. gross*

Ladle into a bowl, and top with the rest of your shredded cheese and crumbled bacon.

My thoughts:

I hate to say this, but it was pretty gross :( I don’t know what happened, if it was the burnt bacon, or because it wasn’t meant for the crock pot, but I’m guessing the main problem is that I don’t use cow’s milk. I drink unsweetened almond milk, and I’ve never had a problem with it tasting bad in anything else I’ve used to cook/bake, but something just didn’t taste right. The last time I made this, it was really good! BUT, I used cow’s milk, and followed the recipe exactly. However, I’m not giving up. I will figure out a good way to make this in my crock pot!!
